Stones are hard by nature, that’s a fact that everybody knows, especially volcanic ones.
So you might come up with the question: if my kitchen countertops are made of stone, like granite for example, then can I cut on them?
Unfortunately, the answer is definitely no, because of good reasons.
Although, natural stones are hard indeed, but they are easy to scratch at the same time, and that’s something you obviously don’t want.
And the other good question is: can I put hot pots or frying pans on my granite (or any other stone) countertops?
The answer is no again, that’s something you should avoid as well.

Scratches – easy to make, difficult to remove
Just as we mentioned, stones like granite may seem hard enough to withstand harsh use, and resistant enough not to be scratched by knives or any other kitchen tools.
But hardness is a deceptive attribute in this case, because of the inner structure of the materials.
Metals, especially alloyed and hardened steels have a much stronger crystalline structure compared to the minerals and crystals that stones contain, even if they are technically harder.
In conclusion, if you cut on the bare surface of the countertops, they will be scratched badly and the edge of your knives will be ruined too.
So always be sure to use a plastic or wooden cutting board to avoid these damages.

What about heat?
Heat can be useful and harmful at the same time, so you should be careful with it.

Not just because heat can cause irreversible changes in the colors of the stone, but in addition it can cause cracks in it!
When something is heated up, its volume increases, and in case of stones the cooling process sometimes inflicts structural changes – cracks or chippings.
These can be repaired up to a certain level, but not the serious ones – in that case, replacing is the only solution.
